Zucchini "Pasta" & Turkey Bolognese (Pre-Op)

INGREDIENTS:
- Zucchini - 3 medium (600 grams)
- Yellow onion - 1/2 medium (80 grams)
- Garlic clove - 3 medium (12 grams or 3 tsp minced garlic)
- Ground turkey - 360 grams or 12.5 oz
- Crushed tomatoes - 2 1/2 cup (605 grams)
- Basil, dried leaves - 1 1/2 tsp
- Thyme, dried leaves - 1 1/2 tsp
- Cumin, ground - 1/4 tsp
- Sea salt - 1/4 tsp
- Black pepper, freshly ground - 1/4 tsp
- Olive oil - 1/2 tbsp (7 grams)
INSTRUCTIONS:
- Use a spiralizer to make zucchini pasta (also known as zoodles). You can also use julienne peeler or a mandolin. If these options are not available you can also slice them carefully with a knife as thin as possible or simply chop them (won't be exactly the same result but it works!).
- Prepare the remaining ingredients: Chop the onion. Mince the garlic (if using whole). Measure the amount of turkey and crushed tomatoes needed. Mix all the spices in a small bowl.
- Place a large pan over medium heat. Once hot, add the olive oil, onion, and garlic. Cook for 1 minute and add the turkey. Cook for 10 minutes or until fully cooked.
- Add the spices and crushed tomatoes. Mix thoroughly and remove from heat.
- Serve over zucchini pasta or simply add the zucchini to the pan and mix gently.
*Note: Divide equally by the listed number of servings. Stays fresh in the refrigerator for up to 3 days. You can store the zucchini separately if desired (can help prevent it from getting soft).
